This vegan broccoli chickpea salad is incredibly flavorful. It can be your next quick, healthy side dish or any light meal for the day.
- Chickpeas, 2 cups, cooked and rinsed.
- Farro (you can also use wild rice, quinoa, or short-grain brown rice)
- Bell pepper (any color)
- Red onion
- Diced celery, ½ cup
- ¼ cup raisins, dried cranberries, or chopped dates
Step 1: Cook the farro on the stovetop or with the instant pot method.
Step 2: Begin preparing the salad while the farro is being cooked. This includes the rinsed and drained chickpeas, mayonnaise, bell pepper, red onion, red pepper flakes, and parsley.
Step 3: Blanch the broccoli in a light manner.
Step 4: As soon as the farro and broccoli are ready, begin adding them and start mixing the salad. Mix them well.
Step 5: Add the optional ingredients. Season the salad with salt and pepper to taste.
