This vegan cream of broccoli soup is fast, healthy, and can be done with only a few but healthy ingredients. It will surely be creamy, nourishing, and tasty for your next plant-based meal.
- Garlic and onion
- Broccoli (fresh or frozen)
- Carrot and celery
- Plant-based milk (or cashew cream)
- Vegetable broth, 1 tbsp.
Step 1: In a pot, add the onion, carrot, garlic, and celery with the vegetable broth. Cook them for 7 minutes until they are fragrant and soft.
Step 2: Put in the rest of the ingredients and let the soup lightly simmer until all the veggies are tender. This step should take about 15 minutes.
Step 3: Transfer the soup carefully to a blender and process it until creamy and smooth. You can also use an immersion blender in the pot.
Step 4: Season it with salt and pepper and add any preferred toppings.
